Plated class: I love it.

This class is probably one of my favorites so far. We have tons of creative freedom! We get a category (like apple, caramel, puff pastry, chocolate, etc.) and then we get to run with it whichever way we choose!! Awesome. This class has given me the most play time so far. Some people in the class don’t like it, because they need more direction, they need something to replicate. Not me! It’s probably one of the few opportunities to play with food, that someone else is paying, for in the next 2-5 years. Hopefully someday I will get to do this again, and get paid to do it! Yay! The plating class requires 3 elements on each plate: The main item,at least 1 sauce, and at least 1 garnish.
1st plate: Coconut bread pudding with spiced coconut caramel sauce and creme fraiche. Garnished with candied ginger and lime.
2nd Plate: Brownie with fresh fruit salsa, whipped ganache, and mint essence.
3rd. Plate: Tiropita filled with lemon sage cream cheese, cream Chantilly, cassis coulis, candied lemon peel and a fresh sage leaf.
4th: Blitz puff filled with honey sweetened chevre , topped with grapefruit and blood orange, creme fraiche, and a candied blood orange slice, with marsala reduction.
5th plate: blitz puff, filled with praline pastry cream, topped with spiced apples, Chantilly, and candied apple slice. Finished with spiced apple pan sauce and toasted hazelnuts.
