I love tartlets.

Tartlets can be one of the best forms of creative freedom. You have a basic mold that can be filled in almost any way imaginable. They have a “bite-size” quality. Tarts are quite different than pies, both are equally delicious. The tartlet is a miniature version of a tart. Tartlets won’t have tops on them, while pies often do. Tartlets are more decorative. The pan structure is different.
This week we started a “buffet” class. That’s the name that all the chefs call this class, because it’s really what it is. Lots of little single serving things. All uniform in each particular dessert, but may options to choose from.
