My bread talks to me.

kate-baguette.jpgThis week has been focused on yeast doughs. By the end of the week we will have made almost a dozen baguettes. My baguettes talk to me. If you have properly fermented dough it develops pockets of CO2 and alcohol. When you punch and roll (or knead) you pop some of these bubbles and it makes a sweet chirp-pop noise. Very pleasing. We are going to make cinnamon rolls tomorrow. Yum.

    Chirp-pop! My baguette is the most flavorful I have ever tried. YUMMMMMMMMMY! I toast it and add just a tiny scraping of butter, and it is yeasty bread heaven…
