Chocolate Demo Preparation

Earlier this week Chef Josh asked me if I would be interested in assisting a guest chef with a demonstration on chocolate, I of course jumped at this opportunity, because as he always says “opportunity knocks softly”. With my lack of experience in this field I figured this would be a golden opportunity to test the waters and gain a little experience, even though it is minimal.
As the week progressed I was informed of the prep work that I would need to participate in. I dedicated most of my Sunday this week to assisting Executive Pastry Chef Raymond Lemmer. Chef Raymond is a tall slender man with glasses and and a look upon his face as if he’s always thinking about something. He speaks with an accent ( I’m unsure of it’s origin) and has been in the pastry field since the age of 12. This man makes amazing thing with chocolate, and he plays by his own rules.
I will add on to the chocolate demo tomorrow or Tuesday after all of the finished product is available!
