I heart tarts! 9-6-07

Today we had the most enjoyable opportunity to make tarts. I LOVE making tarts, they are “like totally cool”. Gabie and I made 2 tarts, the 1st a fresh fruit tart. I had really been looking forward to making since the tart even before class. I’ve never liked doing homework this much before. The fresh fruit tart has a pate sucree or sweet crust, with vanilla pastry cream, and was topped of with a variety of fresh produce. The delectable dessert was then sealed with apricot glaze, not to be confused with apricot jam. The second tart, which is equally beautiful, is a pate brisee or broken crust,that was topped with creme d’amande or almond cream, and then again topped with pears poached in red wine and spices. That smell amazing by the way. It is then baked in the oven to a delicious shade of browns and purples. I brought in asian pears and used those instead. We we so close to being done. Our 2nd tart was in the oven and needed about 10 more minutes in the oven, We will have to finish baking it tomorrow. —K
