Ahhh… What a lovely Vienna Sunburst…

I think I will join the bread club when I am done with the Breads class. They meet on every other weekend with alternating days. I think that I can commit to going to bread club, once a month. Breads are intricate creatures. They need structural development, they need patience, they need accuracy to become these legends in the culinary world. Breads lend a hand into the savory realm for patisserie lovers, like myself.

Today I made the most delicious bagels. Freaking yummy. They’re a black pepper-basil with a slice of stinky old Gruyere cheese on top. The cheese melts into a blanket of crispy fatty delight. Ahhh… Makes my mouth water. I feel like one of Pavlov’s dogs.

We have made many fun breads this week, I’m starting to understand them better, and learn to watch them, and know by time, texture, and structure of the bread. We made a really fun bread, I love braiding bread. It’s like breading hair, but stays in place much better. It can be very intricate work. I want to make an eight-stranded Challah. We made a Vienna Sunburst, for holidays or parties. Below is myself with my good pal Gabie showing off our Vienna’s.

    I arrived at the airport early this morning, found a place there that had cinnamon buns and coffee. It was terrible. You, my dear, have spoiled me. I can’t just have any cinnamon bun anymore; it has to be YOUR cinnamon bun!
