An over due Geniose Cake

We had Genoise cakes as a practical, the week before last. I then jumping into an exciting weekend full of festivities. My geniose cake was a lemon cake with passion fruit butter creamlemon-genoise-passionfruit-buttercream.jpg. I did a nice job with my smooth frosting job and good starts on piping rosettes, but I couldn’t tort a cake to save my life. It was a sloppy, crumbly mess. Not to mention it was my second attempt for geniose that day. Me first cake was so rubbery, that you could practically fold it in half and it would not crack. The perfect Frisbee. We also made Devil’s Food cake, pound cake, chiffon, and swiss rolls. All cakes are very tasty, these cakes make you really gain some arm strength. The Genoise was also a birthday cake for Brooke. I made Pate a choux to go along with it. Fun. It was good to see Brooke. Brooke, don’t forget that we’re going to open a pastry shop one day, with cupcakes!brookescake1.jpg
