wci-pizza.jpgWhen the moon hits your eye like a big pizza pie that’s amore.. Who does not LOVE pizza? Anyone who claims they don’t like pizza is a big fat liar. Today was the 1st official production day. I measured my ingredients in grams for best accuracy to produce a fabulous thin pizza crust. Yum. Next time I’m going to incorporate spices into the dough. I got to kneed, fold, and slam the dough, working it to the right structure for a great thin crust. I had plenty of topping options. the only topping MIA was the black olives. Next time I will attempt a New York style flat crust. I then had the tough decision of standard Baxter oven VS the hearth oven. The hearth oven won me over, I wanted that 525 degree static air to bake my crust to golden brown perfection. The aroma of 20 something pizzas baking simultaneously really kicks your senses into over drive. I, of course, scalded the roof of my mouth on the first bite. Good thing my taste buds have the weekend to recover. —K
